Gastrovac
De Gastrovac is een compact apparaat voor koken en impregneren in een vacuüm. Het is gepatenteerd in meer dan 160 landen en ontwikkeld met de Universidad Politécnica de Valencia en de koks Javier Andrés (La Sucursal Restaurant, Valencia) en Sergio Torres (El Rodat Restaurant, Jávea).
Het functioneert als volgt: door een kunstmatige lage druk, zuurstofvrije atmosfeer te creëren, vermindert de Gastrovac aanzienlijk de kook- en braadtemperaturen, waardoor de textuur, kleur en voedingsstoffen van het voedsel behouden blijven. Bovendien creëert de Gastrovac het "sponseffect": wanneer de atmosferische druk wordt hersteld, absorbeert het voedsel de vloeistof eromheen, waardoor oneindige combinaties van voedsel en smaakstoffen mogelijk zijn.

It functions as follows: by creating an artificial low pressure, oxygen-free atmosphere, the Gastrovac considerably reduces cooking and frying temperatures, maintaining the texture, colour and nutrients of the food. Moreover, the Gastrovac creates the “sponge effect”: when the atmospheric pressure is restored, the food absorbs the liquid around it, allowing infinite combinations of foods and flavours.
